
Simply Hearty Lentil Soup
Ingredients (can be doubled so that leftovers can be frozen for a later date or refrigerated to be enjoyed all week)
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- 1/4 cup finely chopped carrot
- 1/4 cup finely chopped celery
- 1 teaspoon kosher salt
- 1/2 pound lentils, picked and rinsed
- 1/2 cup peeled and chopped tomatoes
- 1 quart low sodium vegetable broth
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground pepper
Directions
1. Place the olive oil into a large pot and set over medium heat.
2. Once hot, add the onion, carrot, celery and salt and sweat until the onions are translucent, approximately 6-7 minutes.
3. Add the lentils, tomatoes, broth, coriander, cumin and pepper, stir to combine.
4. Increase the heat to high and bring just to a boil.
5. Reduce the heat to low, cook at a low simmer until the lentils are tender, approximately 35-40 minutes.
6. Using a blender, puree to your preferred consistency. Serve immediately and enjoy!
